This a 1920's home (nothing square, level or plumb) on an island on Lake Huron so the humidity is always high and winters are solid freezing. Current flloors are peeling lineolum tiles. What will withstand the humidity on wood subfloor over unfinished crawl space and not crack up in the freezing cold? Of course no one is walking on it in the cold temps. The house is not winterized, but may be in the future. Large kitchen neeeds floor bad. What do we put down?

Hee hee, yea carpet or maybe some old rough sawn barn lumber. Even carpet can have issues in that kind of environment.

For a kitchen, I'd steer away from wood and go with tile. You could even lay down a electric heating system and then install tile over that . Should you choose solid wood flooring, I highly recommend that you buy lumber that is sealed on all six sides. Ten Oaks is one flooring manufacturer that offers that and the sealing oil the flooring is dipped in helps a lot with stability.
