I have a fireplace made out of Granite blocks that we will be installing a prefinished strand bamboo wood floor. I previously posted asking the best way to hand wood flooring around fireplace. Undercutting is my preferred look. But from the installers I've talking too, they have all been basically afraid of the "risk" of damaging the fireplace when undercutting. Is this common? Or just mean that they are not experienced at undercutting stone like granite? One recommended contacting someone that works with granite. Is this a cut that is really that difficult/hard, due to the risk of chipping or cracking? Any insight would be greatly appreciated.

I wouldn't sweat it, it rough granite block, just go slow. If it were polished granite tiles I might sweat it a little more, not much. Besides most of what your taking off is the mud underneath it.
Even if you get some slight chipping along the top will it be that noticeable? I doubt it. Besides you can use a matching grout caulk along the top if need be.
