The previous owners probably used moisture-cure because it is an extremely strong and durable finish. But I don't think that would necessarily seal in any smell. Usually the wood smells good, especially pine.
Are you in a low lying area or are there any records of flood damage to the house? Sounds to me like your most likely source of smell is fungus or mold. I would focus my efforts in the basement.
By the way, how soon after you moved in did you refinish the floors?
