I'm not an S&F guy, but I know Bona and Basic make water base products to achieve the oil look.

I haven't used shellac but have seen a couple of floors that were sealed with shellac. In short, shellac can be used but does not give you the same color as oil. if you happen to like the color shellac gives you, you can use it but it is alcohol based(carrier) and stinks quite a bit.

I use Bonakemi water products and recommend two things. The closest look will be to use their dri fast sealer (oil based) and then top coat with one of their water finishes like mega or traffic. The other idea is to use their water based amber seal.

It has the most color out of their water borne sealers. If you like, you can put on a second coat of amber seal for more color.THen finish with one of their top coat materials. In my opinion, it will take two coats of amber seal to approximate the color of oil base.
