I am going to install cork flooring and I have two outside edges where the stairs come up into the room. What type of edging is used where the cork stops and there is no wall? I obviously don't want to have a threshold at the top of the stairs as that creates a trip hazard.

It is called a stairnosing. That's what is used to trim out a step.
