Most pre-finished floors today use an "enhanced" urethane floor finish with additives and UV curing. But IMO, a regular oil-based polyurethane should look close and amber at the same rate ( maybe a little faster ) Keep in mind that jatoba darkens a lot in the first few months. So your floor may look darker than the trim, for now. But the trim should "catch up" in awhile. For 40 lin. ft. of trim molding, I'd consider using a convenient spray can of OIL-BASED ( not acrylic and water-based ) polyurethane in satin or semi-gloss, depending on the sheen you have now.
