Yep, the "T" moldings are required to maintain the manufacturers warranty. If the installer doesn't want to use them, ask him to sign a warranty, that if the flooring separates or gets locked in at the doorjambs, he will be responsible. I bet he changes his tune.
You need a moisture barrier under the cork, it is not a moisture barrier.
I would use Taylors moisture blocker and their cork adhesive, to install the cork. Then float the planks over the gluedown cork.
