It's 2pm. I don't want to stop for the day. But I don't want to open a new bucket and work until it's empty either. I'm going to pre-cut some pieces for tomorrow, but I'd like to lay some more floor. My thought is to cover the adhesive with plastic. Pushed all the way down so that it contacts the adhesive to eliminate air, and then put the lid on. Do I have it?

That's the best you can do without filling the can with dry nitrogen gas from a compressed bottle.

With moisture-cure glue you will always lose some material when you close the bucket overnight. If you have more than a few inches deep, you can close the top with the plastic film on the glue and it still will set up hard after a week or so.
To start using the glue again, you can cut a hole in the bottom to get to fresh glue.
