We are laying a new floor in our existing kitchen (engineered wood) but we are stuck on how to fit it around our Kitchen Island and Patio Doors. I would be grateful if someone could help!

Im not understanding your dilemma. Whats the problem you foresee? You will have to cut the pieces to fit, you sometimes can remove the kickplate and r&r it after you fit the floor in place for a neater cleaner look or if your scared of that trim it out with a piece of shoe.
