 Post subject: Hate new finish & want to remove it, can I screen it off?

The oak floors in my office were recently sanded and polyurethaned with oil poly, no stain. The original floors are massive industrial wood planks and looked great after they were sanded because the wood was really nice and light. Once they put the poly on, the floors turned a really dark red that I hate. I want to remove the new finish they just put on and put a finish on that will retain the "unfinished look" as much as possible.

After doing some research it seems like a water based sealer and poly, like Bona Seal and Bona Novia, will give me the look I want. Does this seem correct?

Secondly, can I screen off the finish and get back to the unfinished wood, or do I have to re-sand?

You will need to fully resand to change the finish appearance.

Waterbase will keep floor its blondest/lightest look.
