 Post subject: floating engineered wood over wood (half) and vinyl (half)

I have two vinyl layers in the kitchen area, one of them very old and possibly with asbestos, the other on top and a bit damaged, and hardwood in an adjacent room, just a tad lower than the vinyl layers. We just remodeled a couple of interior walls and would like to avoid further mess (with two dogs and a baby...).

Is it possible to install floating floor in both rooms without removing the existing mix? Is it practicable? I am looking at Kahrs Cherry Genua, 5/8". but it seems quite thick. Any other thinner suggestions that may be re-sanded once or twice? I really appreciate your replies. Thank you.
