 Post subject: Engineered over vinyl, but what about height difference?

I have a concrete slab, and want to glue down (not float) engineered pecan. I would like to do the whole house. However, the kitchen has two layers of vinyl. I know trying to rip that up will be a major task. So here are my questions:

1-Can I glue down engineered directly on the vinyl?

2-If so, what about the height difference between the two rooms? I estmiate it's about 3/16" or so. I assume probably t molding?

3-Wet rooms, is it okay to install engineered in bathrooms, laundry rooms? (These rooms have vinyl also).

Thanks guys, as I progress with this new project of mine, I'm sure I'll ahve more questions.
