While removing particle board and replacing it with 5/8 plywood, I ran into a patch of wet subfloor behind the refrigerator. The ice maker line has leaked wetting the 1/2 inch ply subfloor. under the frig and the stove. The plywood does not seem to be damaged/separated. I know the smart thing to do is to replaced that section of subfloor, but I'm wondering if there is any kind of work-around other than taking the time for the subfloor to dry. The leak has been repaired.

Replace it or dry it. I can see you already know your options.

I'm taking the easy way: letting it dry. Thanks for your confirmation.
