Would American Cherry be a good choice for a kitchen floor that is a high traffic area? Does it hold up well? Scratch easy? etc.

Depends on the care given, amount of traffic, and what you expect out of it. I've always suggested other alternatives in kitchens. Any hardwood will scratch and ding with American cherry being more susceptible.
